Menu changes according to season, client, and dietary needs.

Meat (pick 3): Chicken, pork, sausage, veal, hamburger, steak, or bacon

Vegetables (pick 3): Asparagus, broccoli, broccolini, cauliflower, chard, green beans, green peas, mushrooms, okra, spinach, summer squash, sweet potatoes, tomatoes, and winter squash

Grain (pick 2): Rice, couscous, bulgur, quinoa, barley, millet, wild rice

Meat can be added to any vegetarian casserole, frittata, quiche, or soup.

Salad, Spread, or Dip:

Feta Walnut Dip – walnuts, parsley, feta, garlic, paprika, cayenne, olive oil, oregano

Casserole:

Bulgarian Pepper Casserole – garlicky herbed sautéed peppers and onions blended w/ feta cheese, dilled lemon rice, and whipped cottage or ricotta cheese, topped with tomatoes, olives, and more garlic.

Red and Green Sopa Seca Casserole– yellow onion, red bell pepper, red or green salsa, tortillas, spinach, cream cheese, grated or Cheddar/Monterey Jack cheese

Tamale Pie – pinto beans, corn kernels, tomato salsa, cumin, oregano, salt, polenta, cilantro, Cheddar cheese

Frittata or Quiche: (These are very flexible and can use any seasonal vegetables, herbs, cheese. I can add meat from above as well. )
