Simple Sauces - Compound Butter Recipe
Here's a preview recipe from this Wednesday's class 6/27/12 of Simple Sauces at the Dallas Farmer's Market. All of the recipes, except one, is made without any cooking! Make your meals more interesting and delicious in minutes with one of these: mayonnaise, tomato sauce, variations on vinaigrette, chimichuri, peanut sauce, tahini sauce, yogurt sauce, miso sauce, compound butter, or pesto.
Compound Butter - is butter mixed with herbs or spices like parsley, cumin, garlic, or lemon. It's a handy way to add a rich and flavorful finish to grilled or roasted meats and fish, but also pasta, beans, grains, and vegetables. Try this recipe for Beurre Maitre d'Hotel which uses parsley, shallot, and lemon from Rhulman's Twenty.
Traditional Hotel Butter
2t minced shallot
2t lemon juice
1/2c salted butter (I would choose an unsalted cultured butter) at room temperature
2t grated lemon zest (optional)
2T minced fresh parsley
Combine minced shallot and lemon juice, allow to macerate for 10 minutes.
Combine all ingredients in a bowl with room to work the butter. Fold the ingredients into the softened butter. The butter should become very creamy and pliable. When the ingredients are evenly dispersed transfer the mixture to a serving dish.
